Meatless Monday Recipe: Slow Cooker Green Curry Lentils

Happy Meatless Monday and happy New Year!

Today I wanted to share a simple, nutrient dense, and delicious one-pot meal your entire family will love: Slow Cooker Vegan Green Curry Lentils. As I’ve mentioned in previous posts, as a busy and working mom there is nothing more exciting on a busy weeknight than coming home to a house filled with warm and welcoming smells and a ready cooked meal (with practically no clean up!). This beautiful protein and fiber dense recipe take only minutes of active cooking time and will simmer to perfection without tying you to the kitchen. Leave the work to the crock pot.

This recipe should make more than enough curried lentils for 4 hungry eaters, but feel free to double or triple the recipe for a bigger family or for leftovers. Leftovers are even better the second day (Meatless Tuesday) and also freeze and defrost easily. Enjoy!

Slow Cooker Green Curry Lentils
Makes 4 Servings


  • 1½ C green lentil, dried
  • 4 C Vegetable Broth
  • 1 yellow onion, diced
  • 2 small Sweet Potatoes, cut into large chunks
  • 4 tablespoons Green Curry Paste
  • 2 C fresh Spinach
  • Salt (to taste)


  • To the bowl of a crock-pot add the lentils, broth, onion, sweet potatoes, and curry paste. Turn the crock-pot to high and cook for about 3½ hours, or until most of the liquid is absorbed and the lentils are tender
  • When the lentils are done, stir in the spinach
